Sevai kheer

Sevai kheer is made for special occasions or as a offering to deity at festivals in India. Enjoy it hot in winters or cold in summer if you like, either way it is a fantastic and nourishing way to end a spicy meal.




Serves 4

INGREDIENTS

2 cups whole milk

4 tbsp. broken fine wheat vermicelli

5 tbsp. sugar

1 tsp cardamom powder

2 tbsp. charoli seeds

A pinch of saffron

METHOD

1) Add the milk in a wide bottomed pan. Let it come to a boil.

2) Add the broken vermicelli, cardamom powder, saffron and charoli nuts in the milk and simmer for 15 minutes.

3) Serve either hot or cold.
